New Years Eve!!

Ok, it's been forever, I'm sorry I have left you out to dry. I don't have many followers yet, so sometimes I feel like I am writing to myself!

In a few hours it will be 2011, and I am so excited for great things to happen this year! Don't get me wrong, 2010 was awesome, I got married, moved, bought our first home, went to St. Thomas. Along with tons more things!! I think 2011 will be just as awesome if not better :).

Hubby has to work tonight until 1 am so I am left all alone to ring in the new year, which is ok. I'll probably head to bed pretty early. Atleast we had the last 2 weeks together :).

Goals for 2011
  • Save up to buy a new car.
  • Keep up with my blog.
  • Stay on top of our finances.
  • Pay off some credit cards (I only have 2, but would really like to get rid of them)
  • Run my first half marathon
  • Eat healthy and excersize more.

I think I am going to start with that for now, as I check off things from the list I will add more :).

Food!

Sorry I went off the deep end at day 8, I just got kinda board writing about my favorite things! Anyway, I have a new recipe I tried a few days ago. We had another couple over for dinner and I made a Pioneer Woman recipe. If you don't know who the Pioneer Woman is, you must go to her website right this minute because ALL her food is delicious! I made her Penne a la Betsy, so so good!
I did make a few changes to it though. I used chicken instead of shrimp, because Josh doesn't like shrimp in his pasta, weird I know. This is one of my favorite pasta recipes ever!

Ingredients

  • ¾ pounds Penne Pasta
  • 1 pound Shrimp
  • 3 Tablespoons Butter
  • 3 Tablespoons Olive Oil
  • 1 whole Onion (small)
  • 2 cloves Garlic
  • ½ cups White Wine (or To Taste)
  • 1 can Tomato Sauce (8 Oz)
  • 1 cup Heavy Cream
  • Fresh Parsley, to taste
  • Fresh Basil - To Taste
  • Salt To Taste
  • Pepper To Taste

Preparation Instructions

Cook the penne pasta until tender-firm, also known as al dente.

Peel, devein and rinse (under cool water) 1 pound of extra large shrimp. Heat about 1 tbsp. butter and olive oil in a skillet. Add the shrimp and cook for a couple minutes until just opaque. Do not overcook them. Remove from heat and let cool for a few minutes. Now, put the cooked shrimp on the cutting board and pull off the tails. Chop the shrimp into bite –sized pieces and set aside.

Finely dice one small onion. Mince two cloves of garlic.
In a large skillet heat 2 tablespoons of butter and 2 tablespoons olive oil. Add the garlic and onion and sauté, stirring occasionally. After the garlic and onions have cooked a bit add your white wine. Let the wine evaporate for a few minutes, stirring occasionally. If you would rather not use wine, you can use low-sodium chicken broth instead (about ½ cup).

Now add an 8-ounce can of plain tomato sauce. Stir well until combined. Then add 1 cup of heavy cream. Continue stirring. Turn heat down to low and let simmer.

Now chop your herbs, about a tablespoon of chopped parsley and about the same amount of chopped basil, or if you’re feeling very proper, chiffonaded.

Now add your chopped shrimp back into the tomato cream sauce. Give it a stir and add salt and pepper to taste. Throw in your herbs and stir until combined. Finally add your cooked penne pasta and give it a good stir.

Day 8!


Day 8- A photo that makes me angry/sad!

This picture will make you sad and angry. I hate all kinds of animal abuse, and I think that people should go to jail for a very long time for animal abuse! It should go the same way with human abuse. Here we go, get ready cause it's a bad one.



This dog needs fed, and it needs nourished, and it needs human LOVE! I feel so bad for dogs that get treated like this. Dogs don't really have a choice, they can't get away from their owner unless they run away. It just makes me cry every time I see stuff like this. I'm sorry I had to share this. People need to reach out to these kinds of dogs.

We still go to the lake every summer, but for some reason childhood memories seem like they were more fun for some reason. Maybe because when your a child you have no worries, and you can just have fun! I still have fun as an adult at the lake! Boating is the best!

Day 4!



Day 4: My Favorite Book!


I almost forgot about this today, I have just been so busy today running all over town! Today's favorite is my book, or books. You are probably going to think I'm a total nerd when you see what book I chose, but I absolutely love this series.

Yes! That is the Twilight Series! I love all the books. I have to say that the very last book is my favorite of them all though. After all they do get what they both want and deserve.
No I am not one of those people that goes into the midnight premier of the movies dresssed like Bella. I also don't scream out when Jacob takes his shirt off. I think those people are crazy!
